I have lifted my chassi using 2inch lift and now panrods are short. are any other series panrods able to fit?

I've got around 2.5" of lift on my LJ78 and the panhards are still ok. Any more than that and you'd probably need adjustable rods, but for 2" you should be ok with the stock ones. Without the weight of the body and drivetrain on the chassis though, you might not get them to fit. In that case I'd say your best bet would be to block the chassis up, remove the springs, lower the chassis or raise the axles until you can get the panhard rods on and then reinstall the springs.

I will be installing the drive train and engine hopefully this weekend and the cab will go on next week. Should I just wait till the final weight is on and then try again?

If you do make sure to add some stability to the chassis, without panhard rods there is nothing keeping the chassis from moving side to side on the axles.
