Expected coolant temps in high temps in hills?

I have a 163K '01 LX and 2 days ago I replaced the thermostat, radiator cap, heater tees and swapped coolant. My radiator (Koyorad) is about 2 years old with 40,000 miles on it. It was running CCI coolant but I swapped it with Toyota red.

I was driving today in 105° temps in a very hilly area (still low altitude) for about 2 hours and noticed that i had some dripping from the fuel cap area in the dust on my truck. I also heard hissing coming from the charcoal canister under the hood. I had read that this is made significantly more likely if your engine temps are out of control, mine seem to sit around 185-192 on flat highway with constant throttle + AC running. However, today in the hills I was sitting at around 194 with very short duration highs in the 200-202 range. Can anyone confirm or deny that this is normal?
 
What are you using to measure the temps, something like a Scangauge? Temps sound normal to me, there's several other similar threads you can read through to confirm.
I'm using the Veepeak one but similar to the scangauge in that it's OBD. I did do some reading but it was hard to get an idea of the sort of temps people are getting in higher load conditions like steep hills with a good condition cooling system
 
Just got back from a Colorado road trip. On very hot days (100F+) at highway speeds with the AC on, I'd see anywhere between 193-203. On one particularly steep incline on US160 from Pagosa Springs to South Fork, I think it peaked at 207. But that was with the AC on and ~3500 RPM for a few miles and loaded down with a lot of gear. Most of the time when around town I'd see ~195. I wasn't too worried about temps because it'd always cool down to normal levels. The thinner air at altitude makes it harder to cool the engine.

Back home at sea level, I see 193 all day. Even when idling/in traffic.

I have some gear in back as well but seems like my temp ranges are at least on the cooler side. I saw peaks during long climbs at high throttle but like you mine seemed to cool quick.

It does make me.concerned about the bubbling fuel though...

What altitudes are you at when you have fuel boiling? I had a terrible fuel smell when I drove up Pikes Peak and Imogene Pass between 13-14,000ft, but that was it.

Not high altitude at all, basically 500-1000ft. I'm not sure if boiling is the right term but I hear hissing from the charcoal canister under the hood and I see some fuel residue like fuel vapor condensed in the gas cap area and a few drops came out from underneath. Now that I think about it though I have only ever seen it before this in a relatively flat area but one where it was extremely hot and sunny (100+ for 6-8 hours) with a lot of slowish driving around 15-20 mph (extremely rocky washboard roads). It seems to occur in scenarios different than what most describe with this issue.
 
On uphill yes its normal that coolant temperatures will go up if you maintain the same cruising speed of 70-80mph. It will also bring up your transmission fluid temperatures especially if cruiser have added weight. Best is go easy on the gas pedal, reduce speed and stay in the right lane. You will notice that sweet spot of below 200°F coolant temps as well as below 170°F trans pan temps.
 
There's a giant thread on fuel boiling issue. Most have luck insulating the fuel lines.
