Elk heart fajitas!

Figured I'd give this one a try.
Elk heart trimmed and cleaned
Red and green Bell Peppers
Onion
Jalapenos
Garlic
cumin
Cayenne pepper
Salt
Pepper
Saute the onion and peppers with salt and pepper (saute the Jalapenos separately if you wish)
mix the cumin, cayenne pepper, garlic and salt/pepper with the chopped heart meat.
Sear the heart meat and warm a tortilla.

Serve the heart meat with the bell pepper/onion and black beans on the tortilla and then top with a green onion, tomato, cilantro, and lime juice salsa and avocado slices..

A friend got her elk before I got mine. This was the heart from her Elk. She could not imagine why I would want to eat an organ

There were leftovers (that's a big damn heart). So Jake and I got to eat them again for dinner the next night

Interesting... I feed hearts to my dogs, but have never considered eating one. What does it taste like? I've always assumed it would taste like liver.

Tasted like meat. Just finer grained than normal beef. No mineral taste at all.

I know this is an old post but I have to strongly disagree with this statement, I absolutely hate liver which is one of only 2 or 3 food items that I dont like, and when I say liver I mean all liver, chicken, pig, beef, deer, moose, etc... But Heart on the other hand is delicious, just have to be sure to trim it up well and it is very lean and tasty. Moose Heart is one of my favorite red meats to eat. My wife and daugher even like it if they dont know what it is...
