it was definitely better with white rice too. We mixed shrimp with crawfish in ours which worked well, I could see using just shrimp in a pinch.

Shrimp work just fine. Most restaurants around here serve both crawfish and shrimp etouffee.


I am reading that most of you guys can catch your own crawfish. If that is the case, don't even bother with an etouffee , boil those suckers live and eat them just like that. I normally never eat etouffee during crawfish season. Live boiled crawfish will blow an etouffee out of the water. There is no comparison.
 
Had this for dinner last night, but used shrimp. It was excellent. If I made it again, I think I'd cut the butter in half and add a can of chicken stock in lieu of one can of soup. Thanks for an excellent recipe.
 
Celebrate by eating some excellent food, the way it was intended.
