Thanks Mr. Sparkplug!!!!!! Wierd thing I just by chance attempted my first etouffe (Shrimp) ever last night and it came out AWESOME!!!! This is one of if not my favorite meals of ALL time.....along with jumbalaya and good ol boudin!!! I lived in Cleveland Ohio with a roomate from New Iberia who used to cook all this stuff up for us all the time. The best eats ever!!! Anyways I just went off of memory and googled a half way decent recipe. BUT NOW WITH THIS i will be working on perfecting it..

My father's family is also from New Iberia. Just so you know, tabasco hot sauce (from New Iberia) sucks, due to the high vinegar content. Use Crystal instead. If you need any pointers on cooking this, let me know. I also agree, it is some of best food on the planet.

I have never heard of your buddy, all of my fathers family are dead and long gone so I don't spend any time in New Iberia. I'll ask my dad if he knows of him next time I talk to him.
