1987 Landcruiser FJ60 US: my auxiliary fan (inside the engine bay) will not shut off after the key is turned off. Is there a set timing it should run post turning the key off or any specifications on when that fan turns on or off?

The fan doesn't even turn on until you turn the key off. There is a thermal switch near the exhaust manifold, it triggers around 100°C. It will turn the fan off after the thermal switch drops below 100°C or after about 20-30 minutes. Whichever comes first.
Did you just buy it or just notice it?
The fan control box may be bad.
or
the temp switch under the manifold is bad and a PO wired the wire directly to ground and it will trigger the fan everytime the key is turned off whether the rig actually ran or just turned the key to on and then off.

The fan should still shut off after 20-30 minutes. It sounds like his is running continuously, even hours after the vehicle has shutdown.

I was taking it that it ran even when cold out after he hooked the wires back up
or
if it ran all the time until battery was dead, maybe that is why it was disconnected
Yeah need more info, could have just not waited he full 20-30 minutes and thinks it's not going to turn off.
Grounding it works well. Doesn't bother me that it always turns on no matter what when the key is switched off

@3_puppies @bhsdriller apologies for any confusion!
The case is this:
1. The fan comes on when key turns off.
2. Fan stays on for +20ish minutes (needed to wait this one out to find out).
3. It will shut off automatically.
4. Fan comes on no matter the temp of the car. Will turn on after car runs for only 1 minute. Stays on for extended time. Hot or cold it runs the same time amount.
The case is this:

So sounds like it's not tied into the temp sensor anymore and that wire is grounded. No issues running it this way unless you just don't want it to
