You are not the only one who has told me that antelope from Northern NV is the best. Hopefully I draw this year. And I need a good venison chili recipe. Any suggestions?

Here is how I make mine, (just my regular chili receipe with venison).
Saute onions and garlic until just translucent, I use about I medium onion and two big cloves of garlic per pound of meat
Add the meat and cook until just browned
Add one can of Ortega fire roasted chili peppers (the short one0.
One 14.5 oz can of diced tomatoes
I cook my beans in the slow cooker, usually one cup dry for this size batch, drained well.
For liquid I add beef broth, but I could see using Modelo Negra.
Tomato paste to thicken

I kind of eyeball the spices these are approximate;
I use the chili powder they sell in the cello pack in the Mexican food isle, about one heaping tablespoon full.
about a half teaspoon of ground coriander and about one teaspoons full of crushed Mexican oregano (also the cello pack stuff).
cayenne pepper to taste, depending on mood I might also throw in crushed chili flakes. I usually make stuff less hot so I can add chili sauce when I eat it.
of course salt to taste.
 
Did some canning last night, vegetable barley soup with venison. Just before it went into the pressure canner. Canning mellows out the gameyness a lot.

Ate my first jar for lunch today. Pretty dammed good if I do say so myself. Kind of like Cambells beef and barley with a lot more meat and flavor. I was surprised at how much flavor a couple of jalapenos added.
