I have cheap Nikon Coolpix camera that was my "trail" camera. Eventually it got some dust and dirt inside the lens. Not enough to ruin it just enough to screw up vacation pictures. After finding out it would cost more to have it cleaned than to replace it I got a new Coolpix.

The old one now lives in my big tool chest in the garage. I use it to take pictures of stuff as I take it apart. A picture journal of the dis-assembly has come in handy more than once.

Yep, a shop camera is a great tool! I'll take pictures during disassembly, print them out, and write down notes to aid in the reassembly.

For the finicky portions maybe shoot a movie. I'm not sure that camera has sound so narrating is out, but does it do mpegs? Free up your mitts for wrenching.

This all reminds me of electronics class in the early 80's. Guys would actually 'draw' their own exploded diagrams as they ripped something apart. Makes one chuckle now eh?

Mine has low res video with sound crappy video but you could supplement it with still shots. I usually don't have that kind of time to screw around. Mostly all I need are a few pictures of key steps.
