Looking at a set of TUNDRA wheels with 27/65/18 tires. Will this tire size work on stock LC200?
 
Assuming you are talking about 275/65/R18 Tires. No issues for fittment, other than they'll be a hair taller and a hair narrower. I'm running 275/70/R18s and they don't rub at all with a small lift. You won't see a significant handling difference with that small of a tire size change.
 
After researching a bit for wheels for myself. I've learned hub-centric is the way to go. Series 200 LC hub is 110mm. Tundra's prior to 2007-2013 are a match at 110 mm. 2014 and newer are slightly larger 110.5mm. Those will not be a proper Hub-centric fit.

At the same time, a 0.25mm run-out is well within acceptable tolerances and not likely for someone to come close to feeling. For all intents and purposes, should still be considered hub-centeric.

Can't say for certain, but I suspect the .5mm change in spec was to add clearance and minimize opportunities to have the wheel hung-up on the hub due to too tight of tolerances. .5mm is a very small dimension.
