Did dinner at a small place near my vacation home in Wisconsin and got talked into getting chai after dinner. I was absolutely amazed by the complex aroma and amazing flavor. Besides getting the tagged and bagged versions, is this something I can make at home? I have access to loose teas and several middle eastern spice houses so getting ingredients shouldn't be an issue.

not mine but here it is

VTry this:

Boil 5 minutes, then steep 10 minutes:

1 Tbsp fennel or anise seed
6 green cardamom pods
12 cloves
1 cinnamon stick
1/4" ginger root, sliced thin
1/4 tsp black pepper corns
2 bay leaves
7 Cups water

Add, bring to a boil, and simmer 5 minutes:

2 Tbsp Darjeeling tea

Add:

6 Tbsp honey or brown sugar
1 Cup milk

Masala Chai

1-1/2 cups water
1 inch stick of cinnamon
8 cardomom pods
8 whole cloves
2/3 cup milk
6 tsp. sugar (or to taste)
3 teaspoons any unperfumed loose black tea

Put 1-1/2 cups water in saucepan. Add the cinnamon, cardomom, and cloves and bring to a boil. Cover, turn heat to low and simmer for 10 minutes. Add the milk and sugar and bring to a simmer again. Throw in the tea leaves, cover, and turn ff the heat. After 2 minutes, strain the tea into two cups and serve immediately.

From Madhur Jaffrey's Indian Cooking, Barron's, New York, p. 196 (1983).

Hope you enjoy it!

Phil,

Try Green Tea Tropical by Mighty Leaf. A little pricy but an EXCELLENT smooth tea. Try it with just a teaspoon of honey. I guarantee you'll like it.

I also drink a cup of Good Earth Green Tea Lemongrass every morning before work (when i'm working). Another very smooth tea and cheaper than the Mighty Leaf.

for good green tea go to a oriental market and pay 16 or more a pound for tea then you have a very green tea. If you have time and inclination but loose tea and diffuse it yourself. it is a better grade and quality tea.
