Got my hands on some salmon roe today. I don't consider myself a very cultured eater, but I had some at a sushi place a couple years ago and was surprised to discover I enjoyed it when I finally mustered the courage:hillbilly:.

I've NO experience preparing it and want to give it a go. I thought about smoking it for no better reason than I heard someone proclaim once upon a time that they liked smoked roe. Anybody done this and have advice? Do you prefer it smoked or un-smoked? Brine only?

Is there some viable way to preserve roe like canning or is fresh the only way to really enjoy it?

you sure it's OK to freeze it? Seems like that would damage the beads.
 
Where dooes anyone say they think it ok to freeze?

good point, it looked to me that this was in a freezer but on closer examination it may have been a towel or some fabric. Should have asked first. Wanted to help.
 
It does look like a freezer. I like those when they are brined or with Miso. When i was a kid my dad would pan fry Ahi eggs with onions and stuff.

Never messed with them myself though.
 
water, borax, and red dye makes great bait that lasts for salmon, trout, & steel head.
They would get that treatment.... if these were for bait

Well, I butchered that first round:frown: I don't think I got the brine hot enough. Eggs were very difficult to remove from the skeins and they didn't finish up very firm. I'll try again with hotter water next time I have some roe on hand.

If you ever get any salmon milt give it a try. It's basically the testicles, two long white fleshy things located about where the roe is in females.
Cube it bread it and fry it up like oysters. The flavor and texture is similar to oysters.

The first time I had it Mom server it to us without telling us what it was:eek:. We were all going back for seconds and thirds.
 
cruiserdrew and I tried to cure salmon roe for ikura a couple years ago when in AK fishing but I think we over-brined the eggs as they turned out gummy. We brined them overnight which in retrospect and from what I've since read is too long for consumption.

I've since read brining the eggs for only 12-15 minutes is all that is required. I've also read to put a little baking soda in the brine...

But for the life of me I don't know why we didn't try it on our recent sockeye foray :mad:.
