What amps does the rear AC outlet provide in my '09 200?
Theoretically, I believe it’s 100 W which should be something like 8 A. The wires to it are pretty small.

Next to nothing. I have yet to find a useful thing that I can plug in that won't trip the 100W threshold. Many laptop type chargers will exceed 100W draw, even if it's only pushing 60W to the device after converting. Same with power tool battery chargers.

Probably a cell phone type adapter, but then USB-C PD is far more useful.
 
To increase the usable wattage in the cargo space, is it better to replace the 3rd row folding seat connectors (if applicable) or to feed the appropriate wiring from the engine bay (with a fuse block, etc.)?
 
I once ran a Crock Pot in Warm mode full of chili for a 60 min drive to a Super Bowl party. Worked fine.

But it's pretty pathetic. At least I can get 400w out of the stock inverter in my Tacoma, engine running but parked.
 
I've used to to charge a DJI drone battery charger. Don't think it could handle much more without tripping.
