Many years ago returning from a wheeling trip, my 40 started overheating at highway speed. If I drove slowly, or stop and go driving I was fine. Same behavior you are describing. After checking everything else possible, I split the intake and exhaust manifold apart and found the flapper for the exhaust deflector had come loose from the rod and was sitting at the bottom of the exhaust manifold blocking exhaust flow.
