Could any of this be used for the sub tank version of the overhead console as far as wiring up

Yeah, the console and visor set up is same, you can swap sub tank gauge assy into it. You probably won't use the wiring part, or at least not the blue compass loom. I think the fuel gauge uses a single signal wire, so probably easier to snake a single wire up the pillar than swap the whole harness in anyway. The altimeter is stand alone and just takes power for light which is already up there.
