Yeah Nor Cal would be a great place if it weren't part of California. To bad the State of Jefferson never materialized.
 
Super quick but tasty meal tonight and it would be equally suitable for any camp dinner!

1 jar of this sauce (WFs): http://seedsofchangefoods.com/our_foods/product.aspx?c=simmer_sauces&p=272

1-boneless skinless chicken breast, cubed (thigh meat would be good too)
2T butter
2-large Yukon Gold potatoes, cut in to 1/8 chunks

Cook the potatoes...very slowly saute the chicken in the butter until near done. Add the Seeds of Change sauce and simmer for 10-minutes.

Enjoy the tikka masala over the potatoes along with a simple side salad.

Many simple variations to keep the boredom at bay!

But tasty at home...and equally so in camp. And did I mention it's simple & fast?
 
For authentic Indian food I like to bring this:

This is her recipe for Indian corn on the cob:

Blacken the corn over the fire.
On a plate, mix together some salt and chili powder.
Take a lime wedge and rub it around in the mixture,
then rub the lime on the corn.

But back on subject, I like the Indian simmer sauces. Just about anything you throw into them is goig to be a crowd pleaser and a welcome departure from the usual camp food.
