Ideas for Doves

I was lucky enough to harvest a few Doves on the opener.
Now wondering how I should prepare them.
Who's got a good idea.

PS Will not do polenta due to cooking time and the fact that I am the only one in the family that will enjoy it.

We always take the breasts and wrap in bacon with a jalapeno slice. Cook on the smoker with a honey and whiskey glaze.
 
Yea, I will pass on the appetizer type, and am leaning towards a main course type of offering.
 
When I was a kid and Dad & I would come home with doves my Mom would season & saute them (roll them in seasoned flour), then into a casserole dish with probably cream of mushroom/celery soup (easily done from scratch and all the better...) and then top with dollops of biscuits to bake in the oven.

It was PDG as I remember.

I've done something similar with bone-in chukar breasts...using a sauce made of sauteed onions, celery and then white wine and chicken sauce thickened with a little roux...and baked in the oven in a covered casserole dish. That was PDG too. Easy to swap the cover with biscuit dough too...
 
I will admit that when I cleaned them (breasted) them, I saved the wings/back bone/legs. I coated them in seasoned flour and sauteed them in EVOO and butter. Deglazed the pan with white wine, onions, and garlic. I took the "Sauce" and put into the blender with sun dried tomatoes(in olive oil). Took the dove parts (after nibbling on them with my sons) and made a standard broth.
Now I have a sauce and a broth.
Thinking of seasoned flour and into the skillet until rare, and then pour in one of my mixtures, and maybe a can of cream of mushroom. Nothing set in stone yet.
Maybe serve over noodles, or rice, or some kind of biscut, or????

On the same line; wrapped in bacon, lightly browned, then in the crock pot w/cream of celery and biscuits on the side.
 
Well, I went ahead and flour coated (seasoned) and flopped them in the skillet of butter and evoo. Did a bacon wrap with a jalapino on the grill and then took a few of the pan fried and added the tomato based concoction. So we had'em 3 ways. Would'nt you know it the family liked the seasoned flour in the skillet the best. (most simple) And shot to he!! out of my gor-met ideas.
Well at least I know where I stand for the next batch if I can get out and bust a few more primers.

Here's some ideas to work with. Saute them and then make a white wine, mushroom cream sauce. I think a fruit sauce of plum, apple or orange would be great with them. How about sauteed in a a rosemary, garlic white wine, butter sauce...it's great on most meats, sans fish...
 
Unless you have issues with fried foods ..... Salt, pepper, flour and hot grease. :)
