Check the brakes too. They could be dragging some.

For the most part wheel bearings should be at most 20 or so degrees above ambient temperature after heavy use. At the surface of the hub you will barely notice it. More than likely any heat you feel there is due to the brakes unless the bearing is lacking lube or is set to tight.
 
I rebuilt my front end last summer and not using a torque wrench had some concerns.
If the hub is too hot to touch then it can't be good. Do you have hot bearing grease coming out? Do the hubs turn easy enough? Are the hubs locked? Might want to go back and check the bearings and not crank down on the nut so tight.

they are warm after a 5 mile freeway ride, not too hot to touch. I tightened to fsm spec with a torque wrench, then set preload to fsm spec using a good quality fish scale. No grease coming out. I will watch them for a bit. the brakes are new and may be causing the warmth.
 
Depending on your wheels, you may be able to use a non contact thermometer to figure out what parts are the hottest.
