Remember, too, the coefficient of proficiency of efficiency of caloric tranfer is proportional to the surface area of the body involved as well. ( ). The radiator is far more capable of heat transfer than the engine block just due to the surface area involved. And remember, we are comparing caloric transfer from iron block to water, with transfer from water to air, so those behavioral properties come into play, as well.

But I think mostly I'm satisfied that removing the thermostat (unless it is broken) is a bad idea because of how it will alter flow and result in bypassing of the radiator.

Yeah, we are saying basically the same thing--it's not that the engine isn't transferring enough heat to the water to cool off the engine, it's that the water isn't made hot enough to then dump it into the air quickly.
