Is it possible to install the 285/70/17s w/o a lift and just the body trim? If so, is there a link to what mods are needed to add the tires?

It will probably be tight. Maybe a little rubbing in lock-to-lock, especially when compressed, like going into a steep driveway. Myself, I wouldn't do any off roading without some sort of suspension lift..
Is there a reason you don't want to do some sort of suspension lift?
Not only will a lift provide the needed room for those tires, but it will also give additional suspension travel.
The extra travel will come in handy when you load down your rig with all sorts of family and camping equipment on bumpy roads. You won't be hitting your bump-stops so often! Or having to go as slow!

You can.

Not sure if it does not rub in all conditions, loaded up or a single corner compressed.

So:
BMC
trimming
removal of running boards
