Kind of an adjunct to the tomato grilling thread.

A couple of things I do with veggies on the grill;

brush eggplant with olive oil and sprinkle with herbs, grill until not quite soft. Carry over cooking will finish them without making them mushy.


Cut rounds of acorn squash, brush with oil and season with salt, grill until soft. It's like eating caramel.

A tip for vegetable kabobs, blanch the longer cooking vegetables to even out cooking time for the K-bobs. We do this with chicken kabobs, it's nice to have veggies cooked and not turn the chicken into cardboard.

I do roots an tubers as well. I make a killer Potatoes Diane on the grill.


Thin slice taters, with or w/o the skin, keep them in a stack a then fan them out like a deck of cards on a sheet of oiled foil. Drizzle with EVOO, season with salt pepper and garlic. This is one of the times when garlic powder is better than the real thing, if you have time to infuse the EVOO with garlic thats even better. You can fit a couple of taters on a sheet of foil, seal it up and put it on a hot section of the grill. If you put them on when you start pre-heating the grill they will cook by the time a steak is medium rare, assuming you fanned them out thin. You can vary the cook time by how thin or thick you make the fans.
 
curious what herbs you use for your grilled eggplant??

I'm sort of anal about Garlic--don't use anything but fresh
(crush a clove and put it in one of those beers------)
 
For egg plant I use the usual suspects; oregano, rosemary, thyme. I've also used a Greek herb blend that is pretty tasty, don't recall the brand name off the top of my head.

For most things I avoid garlic powder but it just works better than fresh in some cases. When doing the potatoes in foil fresh garlic can get scorched, IMHO scorched garlic ruins a dish beyond eating.

Please expand on this. I love pickled okra but haven't found a way to cook fresh okra that didn't come out like mucilage.

Put them on the grill, turn until nicely browned, enjoy.
 
I think that there has to be some sort of special gene to enjoy okra. We do fry it in a pan kind of roasted, and the kids enjoy it. But I can't. Eludes me.

I'm pretty sure you're the one with the special gene. You don't even like peanut butter.:p

LOL. There may be some truth to the gene part.
I don't mind peanut butter actually. It's great for baiting rodent traps...

Talking about real nuts though, roasted nuts could be an interesting topic to experiment with a bit.
 
I want to try soaking them in vinegar for a few hours, roast them and hit them with some sea salt. For some reason, that sounds good.

That sounds tasty.
You might need to blanch them first so they could soak up the vinegar. Maybe add some chili pepper flakes to the marinade? The pickled okra I get is hot and the chili flavor goes well with the okra.

Saw Steven Raichlen grill fresh whole okra...brush with melted butter...sprinkle with s&p...then grill until just starting to char. No slime he said...and also his favorite way to cook and eat okra.

Will try it.

for all the trouble, you could simply buy them pre-roasted...

Maybe it would be worthwhile if you did an alder or apple wood smoke. Something you don't find at the grocery store.
