Around here in Arkansas, I use powerbait. Looks like little gumballs and comes in a variety of colors. Or you could just try some corn.
 
One consideration would be finding out what was legal in that stream. :D

being in a stream you will need to have something floatable pitch it upstream and allow the bait to drift past the hollows along the bank. Is there any larvi hatch bugs etc in progress that may assist if they are after certain critters this time of year there.

If you want to try another method depending on the depth of the stream you could lay out about 2 foot of leader keep the weight behind the swivel have floatable bait and the weight will sit on the bottom depending again on the current (may take more weight) then the bait will float up. sometimes they are skimming the bottom and 2 foot maybe two much. Never tried this in a stream but it works in the lakes. won't even suggest a bobber but that might work also to drift the snacks in front of there face.

Take my daughter out and use the powerbait so she can catch some stockers. If its just me I go for the fly and maybe don't catch anything but have a good time just the same.
 
Gotta remember these fish have eaten pelletized fish food for most of their lives, so presenting them with a lure or bait may not appeal to them. I'd go with floating powerbait balls and/or marshmallows. You want to give them something that smells good and floats. Good luck.
 
Out here in Cali - in the Sierras: Powerbait or salmon eggs
 
with stockers all the normal fishing ideas go out the window. These trout dont even know what a hatch is. All you have to do is get their attention and you will catch them. Something flashy or otherwise very noticable will get their attention and as long as it will remotely fit in their mouths they will usually bite it. try something that will be in the middle of the water column as that's where the stockers usually like to stay.

If its legal in your area ,the kids just need to catch fish right, so forget flies etc. Small hooks,corn,power bait,worms. These work every time at the right time of day. Mike

Honestly, I've seen and experieced the following:

Two guys can be fishing on the same lake, in the same cove, with the same bait, in the same manner and one guy will be catching fish like crazy and the other won't get a single bite. Why? Could be wrong place at the wrong time, could be that the knot angler #1 tied his hook with is holding the bait slightly different than the angler #2's. Could be angler #2 has Copenhagen residue on his fingers and angler #1 has Skoal LC Wintergreen on his. It's very hard to say.
 
Small hook with a salmon egg as others suggested has always worked for me, especially in streams. Use light gear also. And, forget about fishin' if it was a full moon the night before, the fish ate all night.
 
I fully agree with not bothring to fish after a full,or partial, moon the night before. And, wetting the knot when tightening with chew tobacco spit. I had heard of wd-40 but Beechnut tastes better.
