Just had rotors turned on 2015 @ 30K.......no more vibration, but now pedal drops further. Assume result of less meat on the rotor?

Did not change pads 8MM. Brake fluid reservoir about 3/4 full at rest.

Any concern?

It should return to normal after you pump or use the brakes several times. It does that when you change pads or rotors.
 
Fill the reservoir first.

As @Fisher23 points out, because the pistons were pushed back into the caliper the first few pumps will more or less drop to the floor. It feels wrong but that's normal as the pistons push back out. After several pumps they should stiffen.

If this keeps happening you should bleed your brakes.

To jump on to the posts above...
Assuming that the rotors are in spec, and the master cylinder is working properly; then, there isn't a relationship between pedal engagement height and wear on pads/rotors.
:wrench: However, there would be IF you replaced the entire brake system with a cable setup.:slap:
