I had a hankering, so I fired the Bradley up about midnite.......just took 2 of these off........brisket.

I have run out of pork buttes in the freezer, so while it was hot I prepped and loaded 3 in......I give these about 6 hrs of smoke @250 remove and wrap tight in a double layer of HD foil, then they can be finished in the oven or frozen to finish at a later date..........

Right on! I've been cycling the abundance of fresh jalapenos and habaneros through my Cook Shack smoker this week. But I did do a nice pork butt last weekend with pecan that was incredible.

I use all types of hardwood for smoking and cooking. But until a few months ago I have never used pecan before; what a mistake :rolleyes:...its my go to wood for pork now!
 
I use lots of Pecan, seems as if we always have a tree or two dead or limbs on the farm....
Beauty of the Bradley is that you can buy the pucks in woods not available in your region.....
