Best Jalapeno recipe?

what about roasting the jalapeno first? get some extra flavors going on inside the chicken.
 
I tried those bacon/chicken wrapped jalapinos last night. Quite good but not hot enough for our taste. Next time I think I'll chop up the veins and seeds and mix with the cream cheese before stuffing the peppers. That should put a bit more heat into them. I'll also add some spices to the chicken as well, cajun or a spicy rub of some sort. Otherwise they were really nice. Thanks for the idea! Cheers
 
I just made some bacon wrapped poppers in the oven tonight. Seasoned the cream cheese with garlic powder, onion powder, cayanne pepper, salt pepper, oregeno, cilantro, cumin, baked at 400 degees until the bacon was firm/not crispy...tasty!

Tonight I did them again, this time I chopped up the veins and seeds and spread them on the butterfly'd chicken breast before rolling up the jalapeno. These were way hotter and very good. Anyway, one more awesome addtion we are doing is to put a splash of Bronco Bob's Rasberry Chipolte sauce on it before eating. We find ours at the neighborhood Target Super Center.

Happily stuffed....
