Getting ready to send some parts off to get plated (chrome for this piece). When I called the plater with a few questions, he told me to make sure none of my parts have plastic pieces attached to them. I need to get the plastic roller off of this piece and can't tell how to best do it without damaging anything. Any ideas?

That thing is riveted together. You can carefully grind off the deformed end with a dremel or whatever and then pull the pin.

Buuuuuuuuut....you'll need to source another solid rivet and "redo" it. Not rocket science but on something like that, it'll be tedious, but doable.

Maybe get a binder post / screw combo. I think that's what they are called anyway.
