simple test
take a sample of each oil you are considering using in the winter
put into jars and stick in the freezer over night
test in the morning

I did this exact test, but I didn't need a freezer. My first Winnipeg winter with my 1HDT - I was using Rotella 15W40. It was a bear to start below -25°C. Next winter I did the pour test, comparing the Rotella 15W40 and Rotella synthetic 5W40. No contest. The dino 15W40 was like molasses at -30°C. The synthetic poured like, well, like oil. Engine spun up quick on the starter after that. I've been running Rotella T6 5W40 100% synthetic ever since. I change it every 10000 kms.
 
Why would you change your oil and not your filter? Personally if your running more fuel you should changing your oil every 5 k I'm thinking.
 
I change my oil and filter every 5k, usually a little less as I change it in the spring (to 15-40 for summer) and fall (to 5-40 for winter) regardless of km. I'm thinking of just running 5-40 year round.

5w40 Delo for me year round, change it around 5-6k
