Is it dealership programming to get the mirrors to fold in and out with key fob lock/unlock? Or is this a manual function upon entry/exit?

Most add the little dongle thing. I am not sure Techstream can or not

It closes the windows even with the ignition off?

Yes thy do. Just gotta be mindful of unlocking. 3 unlocks those windows will roll down.

Just to clarify, this is an aftermarket product that requires a second keyfob?
If it's able to roll the windows up/down with the car turned completely off, that must require a bit of intrusive wiring?

No... OEM fob. The harness thing just plugs in. 100% reversible.

The downside I have yet to experience is supposedly if you remote start the thing, after 10 minutes when the truck auto shuts off, the alarm supposedly goes off. I dont remote start much
