OK...two items.

1) Any fear you'll actually starve to pump pick-up, with a portion of your oil slowly making its way to/thru the areas you've cut out of your baffle?? WE certainly wouldn't want a majority of your 7 quarts slllowwwwwly making its way down to the pick up...remember, oil doesn't flow like water...

2) What is a crank scraper?
 
I am fairly confident that the oil will find its way back to the sump. The taper of of the plate, along with the grooves which are placed to catch oil returning from the head should, and the design of the factory upper pan will ensure it. A little tesing with some cooking oil will show one amazing things about where the oil goes at various angles and accelerations.

A crank scraper is usually confused with a windage tray... it is a piece of metal that is traced to outline of the crank and rods as they spin by. It cleanly removes and collects the oil trails and such as they whip off the rotating parts, this helps the oil get back to the sump quickly.

If you have access to a sheet metal shop you could have them punch a few louvers that will help with drainage yet reduce the splashing. Kind of the same principal of some of the windage trays that look like expanded metal.
