I do not plan on lifting or off roading the FJ45LV when it is all done. What is the largest tire size I can mount up and not rub with the stock rims?

I have the wheels/rims from the '60 (BFG 32"x11.5"x15") under it now and they look REALLY tight, so much so I'd be nervous driving it. I'm getting a set of 31"x10.5"x15" but will they work?

I'm no tire expert.

I did get the impression that your build was a restoration as opposed to a modified truck (correct me if I'm wrong). Personally I like the skinny tires, 9.5 or even 7.5, on an original look type unit.
My 45 has 7.5's on split rims and they don't look too narrow for the truck IMO. Having said that, mine will be a DD and I have six wider 15" stock rims with the hubcap clips on them that I plan to use (at this point anyway).
With your cross continent commutes I suppose you will be looking for a fairly common and readily available tire that performs well in all terrain but more so on road.
Mine are 31" skinnies, so the question may be will the 10.5 wide fit. I beleive it should fit fine but whatever you do don't take my word for it. Get a second+ opinion.

Just random thoughts

Well I also prefer the skinner look on the stock truck. The FJ45LV will likely not make the cross continent trip more than once when I take it north to stay. I'll be using the OEM disc type 15" wheels on the LV so 10.5 is probably as wide as it should be anyways (if not a little too wide already). The 31's are already bought and paid for, so we'll see how they fit unless someone else has further comments.

OK, I'm not so concerned about what the stock tire size is or was but how tall of a tire can I put on without rubbing issues.

With the 4:11 axles, an H41 4 speed and a 3B diesel my only way to get a little speed is with a "rubber overdrive". The stock size tires are fine in town but on the highway they will be very limiting.

Did you mount the tires yet?

Not yet! I have the wheels, with old 32's on them, for the FJ45LV on my BJ60 and I'll be running them up to Canada to swap out to a set of 31's that I've already bought, and back and then mounting up when I get back here.

I just want to be reasonably sure that the 31's will work.

I drive 31x10,50 R15 on my BJ43
has the B Diesel engine and max speed with these combination is 80 miles, runs great !!!

PS.Don`t think so ;) I never drive my Cruisers in town, the 7,50 x 16 on my 45 are even good on the the german Autobahn :D

made some race training over the years ;)
and I know that I drive a old car of the seventies with driveability out the fifties! !
my 7,50x16 tyres are modern tyres, "baked" just 6 weeks before I mounted them last year
( no old stuff from backyards ;))
