Changed spark plugs and noticed a large chip from one of the spark plug tubes. There was notable oxidation around the coil and the plug itself, but no leaking of oil etc. is this concerning or okay for a bit?

I wouldn't worry. Probably someone washed the engine bay and what water does to a metal. Apply dielectric grease to the top of the spark plug and porcelain and also around the perimeter of the coil that mates the valve cover.

Ideally you should replace that valve cover. I think for a temporary fix some compatible epoxy could help reduce any moisture from coming in or out.
