I realize these are a few years old, but I just ran across them on YouTube and thought others might like to see the series.
Terrain Tamer did a series on the restoration of a 1961 FJ45V pulled out of a field, albeit in fairly good condition. I found the series quite informative and each of the fifteen or so episodes is only about five or six minutes each, so the whole thing is watched in just over an hour or so.
It's not a step by step by any means, but it's nice to have a project overview, including a seemingly realistic budget (~$25K AUD seven years ago).
