I am putting in a custom air intake and filter. I was wondering what I should do with this valve cover breather opening which is usually connected to the carburator intake.

That is usually connected to the air filter.

Yep, it's true. I just don't care that much.
Yep. Breathers don't attach to intake manifold vacuum. Old school (1960s) they simply had a small air filter of their own. More modern ones were plumbed to the "clean" side of the air filter assembly.
