Preparing for a Month in Baja in my 80

I'm wrapping up getting my FZJ80 ready for a month long sabbatical this June, and would appreciate any advice on items I may not have thought about. I'll be driving it from CO to the southern tip of Baja, back up through Baja and CA to Tahoe, doing the Rubicon trail as part of Rubithon, and then making my way back home with some stops in Utah. I'll spend a few nights in hotels, but would like to camp the majority of the time. I've taken care of the mechanical baselining (fixed a lot of leaks, and put in fresh fluids) and it did great on a 14hr road trip a couple weeks ago.

These are the "overlanding" mods I've already made:
  • Drawer system w/ tilting fridge slide and sleeping platform
  • Fridge
  • Power station to power the fridge and other accessories, charges off a 12V outlet in the rear quarter panel
  • Roof rack
  • On-board air compressor
  • 2 Jerry cans on a swingout: 1 water, 1 gas
  • USB-powered fan for sleeping in the truck
  • Mesh covers for the backseat windows to get air circulation while camped

And this is what I'm still planning to do:
  • 270 degree awning on one side of the rack. Likely mounted w/ 3 Gamiviti Layover Brackets
  • 7gal RoadShower and shower enclosure on the other side, 24"x24" bamboo panel for a shower floor
  • Upgraded fuel nozzle for the Wavian gas can: the stupid spring loaded nozzle started leaking the 2nd time I used it
  • Water pump I can use w/o removing the Scepter water can from the rack: Either manual or USB powered - any recommendations?
  • Portable toilet (thinking Cleanwaste?)
  • Spare tire trash bag: Thinking about one from Adventure Trail Gear and using it to store the toilet in addition to trash bags
  • Tinting the windows for privacy and heat reduction
  • Coffee: This is a must, but not sure the best option - French press or pour over with hot water from my camp stove, or a Nespresso machine powered by the inverter in the power station?
Any suggestions? What am I not thinking of? Any camping items you'd highly recommended?
