I was excited to finely get my 315-35-12.5 tires mounted on the Walker-Evans wheels.... but when I installed them they hit the plastic fenders up front in turns. Any one removed them all together or have a pattern to cut the portion down low in the fender well area?

I assume when you're talking about fenders you mean the infamous body mounts. Yes, if you want to fit 35x12.5 you need to cut the body mounts. There's several step by step guides in this forum or on the "blue" forum(fjcruiserforums.com).

got a pic of it? probably the easiest way to see what's actually hitting....
 
The guys at All Pro set me straight ...with a little trimming 1" at the bottom of the fender flare tappered up 6" did the job.

Here are some pics of his cruiser. We trimmed his body mount allittle more now he just needs slightly more room in the inner fender. I think you'll agree ...this truck is bad.
