Thanks Ramon, I may have figured it out earlier today.

After doing some more research, it turns out that the PO125 most of the time has to do something with the first o2 sensor. So I used my Torque App to read the o2 sensor voltages and I wasn't getting anything for the first o2 sensor. So I went around, unplugged it, and I still got the same code. So I plugged it in and made sure it was in all the way, cleared it, and now the voltage is changing and it hasn't come on since.

Before I did this, I drove home from school averaging about 10.5 mpg. After doing what I posted above, I got about 12 on the way back to school.

Things learned from this experience:
- the coolant temp sensor from Toyota($33 before discount) is cheaper than the one at Napa($42). So I got screwed on that one.
- PO125 is not always coolant temp sensor related
- double check all harnesses before replacing sensors

So far the CEL is off and I will keep you guys updated.
