Hey Adam, sounds pretty much like mine too! Just drop the idle rpm and you'll be good. There is a procedure for setting the idle, I think iDave or treeroot posted it a while back. It's probably in the tech links or FAQ somewhere. Or the FSM covers it, and maybe the Haynes manual too.
 
Then you probably didn't adjust the idle speed screw. There are 3 or four screws there. The idle speed screw is the hardest to see and to adjust. It's on the firewall side in the middle of the carb and connects directly to the throttle linkage.

If you adjust the fast idle screw when the choke is not on, nothing really happens. Maybe that's what you did?

Quite possibly... I'll have to check again... I thought it was the right screw..
