I know I am supposed to use grease to lube the gears. Question is, can I use an oil or hydraulic fluid , gear oil instead?

The reason is I am in northern Alberta Canada and was thinking it may be easier in the Winter months.

I would use synthetic grease, you will be fine in winter.... gear oil would be a mistake since it is not a reservoir like the Warn 8274
