head gaskets?

Hi, I had a burned exhaust valve on a 2f head. When I removed the head and compared it to a spare I have, the spare head was clearly in better cond. The majority of the valves were less recessed. I gave it a grind and stem seals ect and bolted it on. Once torqued down I expected the tapped clearances to be bigger, less recessed valves right? Totally opposite. Every valve tappet was between 1 and 3 full turns tight. Each valve was open a bit on tdc comp stroke. So I am thinking some head gaskets are thinner than others? I would have thought they would have to be all the same. Or could it be possible the head has been machined?

Anyhow once adjusted and put back together it runs FANTASTIC. Really happy. so smooth and no leaks in water or oil. [had no idea of head history cracks ect]

Oh, I just thought of something. When the heads are machined at the factory I guess there could be differences in thicknesses due to the machining ect.
The two heads in question have the same casting numbers.
