Trust me on this one...

1/3 cup olive oil
1/3 cup FRESH squeezed lemon or lime juice
1tblsp ground cumin
1tblsp cayenne pepper
1tblsp kosher salt
1 medium bunch cilantro
4 cloves garlic
2 shallots

Chop and grind the s*** out of everything and mix it all up with a wisk.

Throw 4 nice thick, fresh tuna steaks in a ziploc, pour in the goo and suck the air out... let it marinate for an hour or so then grill as desired.

Use extra marinade for dippin' and such.

I have used this on many different kinds of fish and it comes out awesome every time.

I love ahi. Good recipe.

this is mine.

Buy sashimi quality ahi, rinse off and pat dry, then rub oil on them.

in a pan or plate mix:
sesame seeds (alot)
crushed pepper
coarse ground black pepper
red pepper
lemon salt
ginger

Coat that on the ahi, completely cover it. The sesame seeds protect the ahi from being burned.

Sear in a hot pan, both sides. Don't cook it through.

My Tuna recipe:

catch your own tuna
only use thin sliced meat from the top of the backbone
add soy sauce
eat

That sashimi grade s*** from the store sucks

Oh to add to Skillet's recipe.........please don't cook your tuna until it is white in the center, if so.....follow the mexican's recipe.
