Brought my 78 fj40 back to life after decades in storage. Put a new fuel sending unit in , new poly tank. My question is this, what do I ground the sending unit to? Wouldthe frame provide adequate ground to make my fuel gauge work

Yes, I grounded mine to a bolt on the frame.
When I put on my new 2/0 cables I ran the black from the battery to a bolt on the engine. I ran my old #2 black cable from that engine bolt to the frame ground under the front brake tee. From that tee I ran a black #10 up to screw on the cab firewall
