I was craving some egg salad last weekend and came up with this concoction that turned out to be a great experiment. If you like Spicy Tuna at Sushi restaurants, this will be right up your alley.
Egg Salad, Spicy-Tuna Style
Serves 2
4 hard boiled eggs, peeled and chopped up in a bowl
1 avocado, diced
1 jalapeno minced
1-2 green onions minced
1-2 T toasted Seasame Seeds
1/8 cup or so of good mayo (look for the Japanese style with in a big squeeze tube)
2-3 T or so of Siracha, use more if you like it hot!
Pinch of salt,
Stir it all together and eat it with some rice crackers, roll it in some seaweed, or toasted bread or whatever you like.
