Dutch Oven Prime Rib

No prime rib yet. I have done a pork roast and it came out great. Shouldn't have any issues with it drying out.

You'll have to be careful not to over do it if you like it toward the rare side for one that small, as it does cook pretty quick. Or maybe I just used too hot a fire with the pork roast. But you know about that if you have a Dutch oven:doh:
 
I haven't done prime rib either but I do beef brisket in mines when camping and they turn out awesome. Gotta love the dutch ovens!
 
Look up doing one in rock salt in a dutch oven. We did one last year camping and it turned out awesome

What kind of rock salt did you use? Approx cook time and temp?
 
We used the kind you make ice cream with, it was the all white variety for cooking etc. We had a giant dutch oven, I think a 14, put an inch of rock salt on the bottom of the oven. We used a probe in the thickest part and then completely cover with more rock salt. We then set up the oven to cook at about 250 or so to internal on the roast at 125. You will have to break the salt with a hammer as it firms up pretty good around the roast.

What is the purpose of the rock salt? The blog post says that it did not make the meat salty. :confused:
 
Seals in all the juices with the meat when cooking
