First, shoot a deer. Now cut out the backstraps. Marinate in 1 cup saltwater, 4 shots J.D. 1 for the cook,
make Home made bbq sauce. (a bit of ketchup, jelly, worsterchire sauce, liquid smoke, minced garlic, a bit of brown sugar, Honey, a dab of vinegar, another shot of J.D. maby some flour to thicken) be creative.
Now, marinate the backstrap in a bag, in icewater for at least 24 hrs.

Next, fire up the grill. get it rolling with charcoal, and have chopped oak ready. (I like oak flavor, and it is abundant here)
get the grill to approximately 250 degrees farenheit, add oak.

Put the backstrap in a boat of tinfoil, Wrap the backstrap in bacon strips, and pour marinate into it. (not all). cook it for about 30 minutes, and keep it moist with marinate.
then fire up the grill to flames with oak, and take thebackstrap and lay it over the fire and sear it all the way around for about 4 minutes.

this is one of my favorite ways to cook deer. I should have a cooking show.
