Just finished up this four part series on the AJIK website, where I introduced recipes that have been selected based on taste and ease of preparation, allowing for a convenient transition from the dinner table to the overland camp table. Pictured below is last Sundays dinner: Chicken Marsala with fresh green beans. Let me know what you think, or if you have a favorite that you may like to see next. Outdoor Life Section:

Breakfast burrito.

Breakfast burritos anyone? This is an easy way to use leftovers and have a protein packed and fulfilling meal to start the day. Caramelized onions, jalapenos, scrambled eggs and bacon with cherries. Delicious!

Pico de Gallo.

Simple, taste refreshing and easy to prepare....and will help keep the troops happy as you prepare the main course. Make it at home, seal it in a container and it will easily keep for 2-3 in the engel, add it to your scrambled eggs, afternoon nachos or anything else to boost flavor.

Pico de Gallo.

2-3 fresh rip tomatoes, diced
1/2 large white onion, diced
3 fresh medium jalapenos, seeded and diced
1 tablespoon freshly chopped cilantro
Salt, to taste

Next time, black beans and roasted corn....

Texas Tea

Texas tea, it's not too late in the summer to enjoy this refreshing drink! Try it this weekend while taking a break from wrenching on the rig!

Texas Tea

1 cup sugar
1 teaspoon salt
1 cup hot water
1 quart tea, freshly brewed and cooled
Juice of 4 lemons (1/2 cup)
2 cups orange juice
4-5 sprigs fresh mint
Slices of lemon, lime and orange

That looks great! I like the idea, light, but still flavorful.

Have you tried rubbing beef down with Worcestershire sauce while seasoning, an hour or so before grilling?
Being a beef purist, I was opposed to the idea, but I've been trying it out alot lately, and it really accents the flavor of the fats in the meat.
