Use quality drawer slides like Accuride and a quality "marine grade" lock and you should be GTG.
I bought some Accurides that are mounted to the side of the cabinet, and then allow the "slide deck" to be bolted to the top surface of the drawer slide allowing a near seamless top panel when the fridge is removed with the rest of the drawer system.

It's a bit of time and work depending on your connections with a local bender/boat-builder.
IMHO, You might want to consider a plywood design with bearings and steel gusset plates/rails. Much easier to build for a one-off, with no need for fancy CAD drawings to upload to the waterjet. Besides, if you can't do these drawings yourself, you'll burn up any savings paying the shop to do them. Be cheaper to just buy the Slee steel drawers...... I've got a bunch of pic's/links if you need 'em.
I decided to go aluminum, but haven't had much time to fab a set. Didn't make sense to add all that weight to a DD, to me anyways. Good luck man.

The blue-print gives me the bearing idea and makes it clear in my head. Uber simple.
I have a few aluminum boxes that might serve quite nice. I'll have to see, I might just end up building them out of wood and using the bearing idea.
It will still be a little labor intensive.
