There is a shield protecting the vent on the valve cover, not sure exactly what it's called since I can't find the part anywhere. The shield is bent and the plastic gasket was disintegrating.

Do you guys think I'm ok to just bend it back and use something like permatex? Or is there somewhere I can find replacements?

I would call that a baffle. I would bend it back and bolt it back on; not sure why a gasket would be necessary there. Use a little FIPG if it bothers you without a gasket.
 
It is a ventilation baffle and there is a gasket on it. Mine is a fiber gasket. I would also gently tap it into shape and cut a new gasket on it.
