Right. 91 HDJ80, overhauled engine, new radiator, fan clutch, water pump, etc. After driving 15 or so minutes the water temperature gauge shoots up to red. Fire on heater to offshoot the overheating(?)- no heat. After shut down it pisses out a half cup of water below radiator.

Sounds like air bubbles in the cooling system. Where is the coolant coming from on shutdown? Overflow tank, or a loose hose connection somewhere perhaps?

Sounds like an airlock from an improper fill to me, too.

Yep... I usually drive the truck a bit and when I see the gauge climb a bit, I shut it down and then fill and burp... The issue is that the thermostat prevents the system from burping properly on these engines because of the direction of coolant flow...

Is the thermostat opening?

It bubbles in the overflow tank for a few minutes, then stops.
