I thought it was an 81.

The plate on the door says 80.

Does the year it was built not denote the model year?

depends on what month it was made in

door plate will be what DMV will be interested in. I think there is very little differences between 80 and 81s mechanically.

If you still have the emissions sticker, it will say what model year it is. "...complies to 198x EPA requirements..." or something like that.

I thought all cars were like that, an 85 was generally made in 84 etc. Model year vs. manufacturing year. My 4Runner was like that as well, never paid attention to any of my other vehicles.

This is correct. The date on the door is the build date. Most new models come out in the fall of the year before and run through the next summer into fall. Your 81 could be made anywhere from around Oct 80 to September 81. Sometimes with new models it comes out even earlier. I belive the first 07 FJ had build date in March of 06 or even earlier.
