Does anyone have any good recommendations for where I could get some new seats (or get current seats reupholstered) in Dallas?

I know a guy in Houston who wants $1500 for the front two but it seems a bit steep to me.

Lol at $1500. You can get a nice set of aftermarket seats for under $1k that are probably way more comfortable than the stockers. Unless you're a purist I guess. I just don't think the stockers are very comfortable, but mine are in pretty bad shape.

I'd rather not put just some random set of seats in there. Bit of a purist I suppose.

$1500 should be plenty to have your original seats repaired and recovered with quality leather.
