I have a new to me 2021 Land Cruiser Heritage Edition. I just installed 275/70/18 Toyo Open Country AT3's and Spidertrax 1.25" spacers. The vehicle already had the front OEM levelers on it and previously had 285/65/18 that had no rubbing.

The new tires rub a lot even at 50% turning. From the advice I saw in reviewing this forum, it seemed people were running this same setup without issues. Is it the spacers creating the problem? I love the look and size of the tires and can switch back still.
 
These are over 33" tires (33.16") to be exact. You will need to do some plastic "massaging" in the front to get these not to rub. For reference, 285/65/18 measures 32.58" in diameter.

The spacers are probably also contributing to your problem but overall, you should be fine with a heat gun/removing plastics.
 
I run 275/70/18 Toyo Open Country AT3's and 1" Bora Spacers. I had very very minor rubbing. You need to remove the front mud flap.

I don't understand how you've got "a lot" of rubbing even at 50% turn. Are you sure you're running 275/70/18 and not 275/75/18?
 
They are 275/70/18's and they did remove the front mud flaps. It seems like the 1.25" spacers are my problem and I'm going to have them removed. I moved the BF Goodrick KO 2's and the Toyo are dramatically quieter and smoother.

I’m really perplexed as I am running the same setup but with 285/70r18 without any rubbing whatsoever. Would you mind posting some pics of the side profile and around the wheel well so we can see what’s going on?

I have the exact same setup, tires/spacers/top hat spacers, and I have no rubbing after removing the mud flaps. You might have to massage the front portion of the inner fender liner but that would be the most drastic work required if it even needs that.

Take a heat gun to those inner liners and massage them some and you'll be fine.
